Arbi Fried 

 





Ingredients
  • Arbi - 250 grms
  • Salt to taste
  • Haldi (turmeric) Powder -1/2 tsp
  • Red Chili Powder - 1/2 tsp
  • Dhania(dry coriander) Powder - 2 tbsp
  • Chat masala - 1tsp
  • Garam masala -1/4 tsp
  • Cooking oil for shallow frying.
Method
Wash arbi properly, boil in pressure cooker for 5 minutes or till it softens.When steam is released open the lid of pressure cooker let it be cool or drain the hot water and add 2-3 cups of fresh water (arbi will be cool enough to hold in hand for removing its skin). Remove the skin of arbi and cut(horizontally) into two pieces. Heat oil in broad bottom vessel like frying pan for shallow frying . Shallow fry arbi till it's both sides are golden brown and keep aside. Put all dry masalas in a bowl and mix them properly and fold all pieces of fried arbi (one by one) in the mixture and keep a side. Remove the additional oil from the frying pan leaving 1tbsp, add arbi and cover the pan with lid properly and cook of sim gas for 5 minutes meantime stir arbi gently so that pieces are not broken.
Serve as additional dish to Dal or any curry type dish with chapattis/rice.
