Bangan Fried








Ingredients
  • Big Round Bangan (Brinjal) - 250 grms.
  • Salt to taste
  • Red chili powder - 1/2 tsp
  • Dhania (dry coriander) powder - 1tbsp.
  • Black pepper powder - 1/2 tsp.(optional)
  • Chat Masala/Amchoor - 1/2 tsp (optional)
  • Pudina (Mint) leaves finally chopped -1tbsp.
  • Fresh Green Dhania (coriander) finally chopped - 1 tbsp.
  • Cooking oil for shallow frying
Method
  1. Wash the bangan properly; remove the top of the bangan; cut it in two parts; cut each part in slices of 1/2 inch thick. Slit each slice with tip of knife at the distance of 1/2 inch vertically and horizontally.
  2. Fill salt in slits of slices and keep aside for 15-20 minutes.
  3. Mix red chili powder, dhania powder,(black pepper powder, chat masala/amchoor) in a small bowl.
  4. Wash slices of bangan in small water, squeeze it properly to remove the extra salt water.
  5. Heat cooking oil in frying pan for shallow frying;
  6. Place each slice of bangan in the frying pan; fry both sides till it is dark brown.
  7. Arrange all fried slices in frying pan keeping the side having slits upwards.
  8. Sprinkle mixture of dry maslas on the slices of bangan;
  9. Garnish with finally chopped mint leaves and fresh dhania leaves.
  10. Close pan with lid and cook on sim flame for few minutes.
  11. Serve hot along with other maincourse dishes during main meals i.e. Lunch or Dinner.
