Chothe (Sweet Mathri)
Ingredients
Mix sugar and water stir till sugar melts and keep aside. Put flour in a big broad vessel like parat/thal, add cooking oil and mix the oil and flour properly add slowly the mixture of water and sugar and knee it to a stiff dough. Distribute the dough into 6-7 parts and make round balls. Rollout the each ball to the extent of 6 inch diameter, prick it with tip of knife or fork and cut it in to four pieces (in the cross (+) shape) and keep aside. Heat the oil for deep frying, drop one by one in the oil (number of the pieces to be dropped at a time depends on the size of vessel and oil it contains) fry on slow flame till they are golden brown and crispy. Place fried chothas on paper towel or tissue paper to soak the extra oil and let it cool. when it cool store in the air tight container. It can be retained for long time.
