Gobhi, Shalgam & Gajjar Achar in water
Ingredients
  • Gobhi (Cauliflower)- 200grms
  • Shalgam - 200grms
  • Gajjar(carrot) - 200 grms
  • Rai seeds - 30grms.
  • Garlic fresh green(finally chopped)- 50grms
  • Haldi (Turmeric) - 1/2tsp
  • Salt to taste
  • Red Chili powder - 1/2 tsp.
Method
Cut Gobhi, Gajjar and Shalgam in big pieces. Boil water in a big pan add chopped Gobhi, Gajjar and Shalgam boil for 1 minute close the pan with lid and remove the pan from the gas and keep aside for 10 minutes.Mean time grind separately rai seeds and green garlic coarsely and keep a side. Drain water and place the boiled vegetables in a big bowl add salt, grinded rai seeds, green garlic, haldi, red chili powder shake it thoroughly to mix masalas and vegetables properly. Fill it in a big glass jar tightly pour the water up to the level of vegetables i.e. vegetables must dip in the water. Keep the jar in sun and shake it from down to up and vice versa twice a day. Achar will be ready to eat in 4-5 days. It can be served with rice.
