Ingredients
- Raw Mango - 1kg.
- Sugar - 250 grms
- Salt - 1 tsp.
- Jeera (cumin seeds) - 1tsp.
- Kaloungi (Onion Seeds) - 1tsp
- Tejpata (Bay leaves) - 2
- Black Pepper whole - 12
- Red Chili Powder - 1/2 tsp
- Water - 500 grms
Wash the mangoes properly and rub with clean cloth/kitchen towel properly to make it dry. Peel out the skin of mango and cut in small pieces of 1x 1&1/2 inch with thickness of around 1/3 inch. Place pieces of mango in a bowl and add salt shake it thoroughly to mix the salt leave it for 5 minutes. Spread Mango pieces on big plate/tray or clean cloth and place under fan for 1hour or in the sun for 10 minutes.
Mix the suger and water in a vessel and put it on the gas, stir it till sugar melts and starts boiling add Jeera(cumin seeds), kallaoungi(onion seeds), tejpata(bay leaves), black pepper , red chili powder, boil it for 5 minutes. Add Mango pieces and boil on sim gas till it softens and become translucent. Switch off the gas add 1/2 tsp of Acitic Acid or 1 serving spoon of veniger for preservation. Keep a side. When it is completely cool store in a airtight glass jar. It can be retained for 15-20 days. If its kept in Refrigerator it may last for month or so.
It can be served with the main course dishes during lunch or dinner. It has digesting power.
