Ingredients
- Ripe stiff Mango(preferably Totapuri Mango)- 1kg.
- Sugar - 250 grms
- Salt - 1/2 tsp.
- Jeera (cumin seeds) - 1tsp.
- Kaloungi (Onion Seeds) - 1tsp
- Tejpata (Bay leaves) - 2
- Black Pepper (whole) - 12
- Red Chilli Powder - 1/2 tsp
- Water - 500 grms
Wash the mangoes properly and rub with clean cloth/kitchen towel properly to make it dry. Peel out the skin of mango and cut in small pieces of 2 x 1&1/2 inch with thickness of around 1/2 inch. . Spread Mango pieces on big plate/tray or clean cloth and place under fan for 15 minutes.
Mix the sugar and water in a vessel and put it on the gas, stir it till sugar melts and starts boiling add Jeera(cumin seeds), Kallaoungi(onion seeds) , Tejpata(bay leaves), black pepper , red chilli powder, boil it for 5 minutes. Add Mango pieces and boil on sim gas till it softens and become translucent. Switch off the gas, add 1/2 tsp of Acetic Acid or 1serving spoon of veniger for preservation. Keep a side. When it completely cools store in a airtight glass jar. It can be retained for 15-20 days. If it is kept in refrigerator it may last for month or so.
It can be served with the main course dishes during lunch or dinner.
