Ingredients
- 8(360 grms) Lemons
- 1/4 cup (40 grms) salt
- 1/2 tsp haldi
- 1/2 tsp ajwain
- 4 green chilli (Cut into two peices lengthewise)
- 50grms ginger chopped in strips of approx.two inch long
- 6 whole red chilly (coarsely grounded).
- Wash the lemons and wipe them thoroughly.
- Cut 1/2 of lemons in two halves each. Squeeze out the juice each and keep the juice separately.
- Cut 4 slits in each of the remaining lemons.
- Keep all lemons and skins of the lemon in a sterilised glass jar.
- Combine lemon juice, salt turmeric powder, ajwain, green chillies, ginger, red chillies and mix well.
- Pour the mixture over the lemons. Press down the lemons in the jar with spoon so that juice covers the lemons.
- Cover the jar with lid and keep in the sun for 8-10 days until the lemons are soft and their skins give way under the pressure of thumb. Toss the ingredients in the jar occasionally.
