Instant Dhokla
Ingredients
For Batter
- 1 Cup besan/gram flour
- ½ Cup curd/ yogurt.
- 1 teaspoon sugar
- 1/2 tsp Salt / as per taste
- A pinch of asafetida.
- 1/2 Cup water.
- 1 seiche Eno salt
- 1/4 tsp baking powder
For Tempering
- 2 Tbsp cooking oil
- 5-8 curry leaves
- 4-5 Green chilies slit
- 1 tsp sesame seeds/dry coconut powder
- 2 Tbsp jaggery/sugar
- 1 teaspoon mustard seeds
- 1 Cup water
Method
- Take a large mixing bowl add gram flour and salt mix it properly
- In a separate bowl Mix curd and water properly to make butter milk
- Add butter milk slowly in gram flour stirring it to make smooth batter there should be no lumps beat it for ,5-10 minutes. keep aside for 30 minutes
- Preheat the steamer by adding 2 cups of water
- Grease the dhokla container
- Once the steamer is ready, beat the batter for few minutes. Now mix the Eno fruit salt and baking powder and stir gently in one direction. Due to adding Eno batter will increase in volume, almost double.
- Immediately pour this batter into greased container and steam it for 10-15 mins on high flame
- After 10-15 mins insert a knife or toothpick, check it should come out clean. if not than steam it for another 5 min.
- Switch off the flame, and allow dhokla to remain for 10-15 in steamer/vessel to cool down
- Meanwhile, prepare for tempering. Heat oil in a heavy bottom pan add mustard seeds, slit green chili, curry leaves, and sesame seeds.(optional)
- Once seeds start spluttering add jaggery powder/sugar water and cook on sim gas for a few minutes off the gas keep tempering aside
- Remove dhokla from steamer/vessel cut it from sides with sharp knife overturn it on plate. Now cut it into pieces.
- Pour tempering over the steamed dhokla let it rest for 15 min. Instant besan dhokla will absorb this syrup.
- Finally, garnish with chopped coriander and serve immediately with green coriander /sweet chutney.
